Marinated Kale with Radish and Pine Nuts

DSC04778With the weekend approaching, you may want to try a new salad to add to your lunch or dinner menu.  This is one of the most simplest recipes ever! A great side dish if I must say!  Leave any leftovers in your fridge, it will taste great even after a few days.  Simple, easy, healthy – how could you not?  After all, who doesn’t love kale?  😛

  • 2 cups of shredded lacinato (dark-green) kale, ribs removed
  • 4 radishes, quartered
  • 2 tbsp pine nuts
  • Olive oil
  • Juice of 1/2 lemon
  • Sea salt
  1. In a bowl, combine all ingredients and marinate.

Yup, it’s that easy!  Go for it!  😉

  1. Now this I shall be trying.. LOL.. as I have lots of Curly Kale in the garden.. I think I would like this better than the Kale Cheesy Chips.. 🙂 Love Kale raw in my salads.. 🙂
