Raw Coconut Mint Brownies

DSC04874I know what you’re thinking.  Raw brownies? HA!  Can’t possibly be any good let alone compare to the real thing!

If only you knew.

I made these for our charity fundraising bake sale at work.  Wouldn’t you know they were gone before you knew it!  The lucky few who tried it loved it and requested the recipe of course!

And since good things are meant to share…  😉

I must warn you though.  These are without a doubt very delicious and if you let them sit out for at least an hour at room temperature, they are even more soft and chewy, just like real baked brownies.  The only difference between a baked brownie and these is that these are way more healthier than what you’re used to.  So you can definitely enjoy these with a lot less guilt!  😉

Ingredients:

First Layer

  • 1/2 cup raw organic cashews
  • 1/2 cup raw organic almonds
  • 1 and 1/3 cups pitted dates
  • 1 tsp vanilla extract
  • 5 tbsp raw organic cacao powder
  • 10 drops of pure peppermint extract
  • Dash of sea salt
  • Optional: chocolate chips or cacao nibs

Second Layer

  • 1/2 cup raw organic cashews
  • 1/2 cup raw organic almonds
  • 1 cup dates
  • 5 tbsp raw organic cacao powder
  • 4 tbsp shredded organic unsweetened coconut
  • 2 tbsp raw organic agave nectar
  • 1/4 tsp sea salt
  1. Combine all ingredients for the first layer in a food processor.
  2. DSC04768When finished, empty into an 8×8 square pan and flatten with a spoon (or your hand) until it covers the bottom of the pan.
  3. Next, combine all ingredients for the second layer in the food processor.
  4. When finished, empty into the 8×8 square pan and flatten on top of the first layer.  It should cover the first layer in its entirety.
  5. Refrigerate for about an hour (I find that refrigerating it overnight and then letting it sit at room temperature for 2 hours the next day yields perfectly moist brownies).
  6. Remove and use a big knife to cut into desired size pieces.
  7. Store remaining brownies in the fridge (if they last that long of course!)
