So I’m a little late in the game here but who says you can’t enjoy a Pumpkin Pie Smoothie year round? 😛
I came across this recipe in the Clean Program’s Sample Meal Plan which is available and free online to anyone who’s interested in grabbing more delicious “clean” recipes.
Of course I modified the original recipe to my liking by eliminating the almond milk and using water with raw organic almonds and vanilla extract instead. I absolutely love this smoothie and just can’t seem to get enough of it! I’m sure you’ll enjoy it too! You can even go as far as scooping into dessert cups and topping it with whipped cream and extra cinnamon!
- 3/8 cup raw organic pumpkin
- 3/4 cup water
- 1/4 cup almonds
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp fresh ground ginger
- 2 pitted dates
- 1/8 cup raw pecans
Blend all ingredients until smooth and creamy. Top with a sprinkle of cinnamon and/or nutmeg if desired and enjoy!
